Keshar means "saffron flower" in Sanskrit, and keshari refers to the saffron colour used as a natural food colour and spice and in dyes.
     Kesari is also a sweet dish commonly made in South India. The sweet dish is made with semolina, sugar & ghee. Since a pinch of Saffron (kesari) is added to give the sweet dish an orange color, the sweet dish gets its name as 'Kesari'. But here in this recipe i have changed the flavour and colour a bit by adding pineapple flavor and turmeric.

INGREDIENTS:
Semolina (Rava)-1 ½ cup
Sugar-2 cups
Salt- pinch
Water-3 cups
Cashew-10
Raisins-6
Ghee- ¼ cup
Cardamom-3-4
Yellow food colour/ turmeric- 2 drops
Pineapple essence-1 tablespoon

PROCEDURE:
  • Roast the cashew and raisins in ghee and take out
  • In the same ghee roast the rava till the raw smell disappears
  • In a sauce pan add water, food colour and salt allow to boil. When it reaches rolling hot, add the semolina and stir. When the semolina half cooked,  add the cardamom. Then add sugar and ghee little by little. When the semolina is cooked well add the pine apple essence, fried cashew and raisins and mix well.
